Fitting in a run during a sometimes unpredictable work and life schedule often means managing my energy levels before the run and afterwards so I always appreciate a quick snack that tastes good, satiates the appetite without being filling and packs in nutrients for the run and then recovery.

I was introduced to Rickaroons by a friend as was immediately interested in trying them as I have a penchant for coconut, and often purchase macaroons for mid-morning or late afternoon snack. Rickaroons are a take on the classic macaroon but packed with sustainable energy with the addition of almonds, chocolate and even chia in one of their four various flavors.

Starting with their Chocolate Blonde which is their original, it’s made up of six simple ingredients; Shredded Coconut, Almond Butter, Coconut Palm Nectar, Dark Chocolate Chips, Coconut Oil, and Vanilla and contains 17g of carbohydrates, 4g of protein and 242 calories. The three other flavors include Mint to Be, Mocha, with espresso beans, and the Megaroon which contains chia seeds and cacao nibs. All Rickaroon energy bars are 100% Organic, Vegan, Paleo Friendly, and Soy & Gluten Free and contain Non-GMO ingredients.

All four flavors are delicious it’s hard to just choose one as a favorite.
